The Parisian restaurant Le 39V launches in the heart of the golden triangle

16 November 2021

Entirely redesigned and decorated by the designer Raphaël Navot, this haven of peace, nestled on the rooftops of Paris and overlooking the Avenue George V, is adorned with its most beautiful assets and offers a place to live as if suspended in the air where the grandeur of French craftsmanship and know-how excels.

More than a restaurant, it is a place of culinary life, as warm as it is benevolent, around a precise cuisine that respects nature and people. "I claim an innkeeper's approach, generosity and simplicity," explains Frédéric Vardon. "Committed to responsible cooking, I make it a point of honour to cook according to what nature produces at its best. This is my responsibility as a chef".

THE KITCHEN

Frédéric Vardon's cooking is elegant, sincere and committed to the greatest respect for tradition. His absolute priority: taste! The 39V is the showcase of the French territory that he loves so much and that he constantly travels to in search of new things. His partners - breeders, producers, market gardeners and wine growers - are his priority, as are the men and women who work alongside him every day, united and committed, both in the dining room and in the kitchen, to bring the French art of living to life. "The closeness I have created with them allows me to better respect and understand their products. Without them, nothing would be possible.
